William Pokhlebnin (1923-2000), a historian with specialization in Scandinavian countries, is an author of numerous culinary books. In the west he is known, most regrettably, A History of Russian Vodka, his weakest works which was sort of tax to the authorities to be permitted to access archives and to continue publishing. Vodka is his only work available, at least widely, in English translation, which is truly regrettable. To the best of my knowledge, Pokhlebkin is the only author who succeeded in identifying and presenting the essence of Russian approach to food. I’m looking for a translation or at least a thorough review of Pokhlebkin’s work. Any hints?
